Same reason we find eggs on Easter, people need a non-religious reason to celebrate a holiday.

St. Patrick's Day was named after Saint Patrick after he drove the snakes out of Ireland, which were probably actually Pagans (Celts to be more specific) because a snake is a Pagan symbol, and you'd have to be pretty crazy to try to get rid of actual snakes back then. So now Christians celebrate that, but I don't know where the pinching came in.
And as for the Easter eggs, there actually is a religious meaning behind it, it's just not a Christian one. Easter was originally called Ostara, and it was in celebration of the spring equinox. And the children would present eggs to the goddess Ostara (there are different spellings of her name) as a gift for her bringing back Spring. And Ostara was touched by their kindness that she had her minions (rabbits) return the eggs back to the children's baskets. And when the whole Christian adopting Pagan holidays to get more followers came, they kept the traditions and made them Christian.
