I LOVE enchilada casserole! For some reason I make it better than my mom, even though she's been cooking for at least 30 years more than me.
I can't have turkey, it messes with my stomach too much. -

We do one every other year. This year we're having hamburgers, chicken nuggets, mozzarella sticks, soft pretzels, triscuit pizzas, pies, a veggie tray (probably the only healthy thing we're having), we're debating on whether to make apple sauce doughnuts or not, chips, stick pretzels and humus, and probably a few other things that I"m forgetting.
